Fermenting is a science experiment where you use an army of microorganisms (bacteria, yeast and sometimes fungi) to convert sugars and starch into natural preservatives like alcohol or acids. This process preserves them, but also changes the flavor, giving it tangy, strong and slightly sour flavours. Things like beer, yogurt, sauerkraut, sourdough, pickles, kombucha and vinegar all get their distinctive flavors from different kinds of fermentation. We ferment our products to give it the distinct tangy flavor and create natural preservation for our products.
